Low Lectin Hummus?

A few years ago, a local TV station did a feature on Victor Foods™ Hummus.  During that interview I was talking about how we soak and cook the garbanzo beans.  We cook the beans for a long time to make sure that the lectins are minimized.

Lately, there has been a lot of talk on television and social media about lectins.  It turns out that gluten is one of a many lectins.  Lectins are proteins that the plants make to fend off predators.  So, they are really poisons.  Insects may die immediately depending on the lectin consumed.  These proteins are also shown to be harmful to the digestive system of humans.  Many lectins can be destroyed depending on how the beans are cooked, which is what we have done from day one.
